BUTTERMILK PIE 
4 eggs
1 1/2-2 c. sugar
6 tsp. butter, melted
2 tsp. flour
1/2 tsp. salt
1 tsp. vanilla
3/4 c. buttermilk
1 c. coconut (optional)
1 (9") unbaked pie shell
1/3 c. nuts, chopped (walnuts, pecans or almonds)

Beat eggs in medium bowl with electric mixer. Add sugar, butter, flour, vanilla and salt. Reduce mixer speed; slowly add buttermilk and blend well. Stir in coconut if adding. Pour filling into pie shell. Sprinkle nuts on top. Bake for 40-45 minutes or until knife comes out clean and top is golden. Keep refrigerated.
