CREAM OF POTATO SOUP 
5 or 6 med. potatoes
2 lg. stalks celery
1 med. onion
3 slices bacon or ham
1 c. milk
1 tsp. butter
Sprinkle of parsley flakes
1 egg
Salt and pepper

Boil 5 or 6 medium potatoes with 2 large stalks of celery (cut about 2 inches long), 1 medium onion (cut up) and 3 slices of bacon or ham. Boil until potatoes, bacon, celery and onions are done. Save liquid that potatoes, etc. were boiled in. Remove potatoes and put through strainer or mash. Remove bacon and celery, put aside.

Add to mashed potatoes, 1 cup milk and 1 cup liquid (saved from potatoes). Cut up bacon or ham and add to potato mixture. Add 1 teaspoon of butter, parsley flakes, celery and onions. Beat 1 egg and add to mixture. Stir well and heat, stirring constantly until egg is cooked and soup thickens. Add salt and pepper to taste.
