CREAM OF POTATO SOUP | |
Base for other cream soups also. 2-3 onions Mashed potatoes Milk Melt 1 stick butter in Dutch oven. Chop and add onions. Cook until translucent. Add left over potatoes which are mashed, blended or processed in food processor. Mash around pan with potato masher. Add milk to desired thickness and correct seasonings. Do not boil. Variations: Cream broccoli and/or cauliflower. Use stems and leaves left over from salad making. Run chunks through food processor to desired fineness. Add with onions. Proceed as above. Cheese: Cut up or shredded cheese can be added and melted in or it can be sprinkled on top of each serving. Cook bacon bits and use it and bacon grease instead of butter. Clean your refrigerator. Add anything you like, bits of cooked meat, leftover vegetables, cooked or raw. |
