HAM & RICOTTA SQUARES 
1 loaf thin sliced sandwich bread
1 stick butter
12 eggs
1 lb. ricotta cheese
1/2 lb. coarsely chopped ham
4 tbsp. diced mozzarella cheese
3 tbsp. coarsely chopped green pepper
3 heaping tbsp. Parmesan or Romano cheese
Pepper to taste

Cut crusts off bread and roll slices thin with rolling pin. Brush both sides of bread with melted butter. Line 8 x 12 inch pan with bread covering sides and bottom; reserve remaining slices for top. It will take a full loaf.

Beat eggs well and add Ricotta cheese. Beat again. You may use mixer to beat eggs and cheese, but as you add remaining ingredients mix by hand. Pour mixture into bread-lined pan. Cover with remaining slices of buttered bread and bake in 325 degree oven for 1 hour. Test as you would for custard pie with knife. Serve hot or cold. Cut into large squares for brunch or into 1 inch squares with toothpick for parties.
