SUMMER SAUSAGE 
5 lb. hamburger
5 tsp. Morton's Tender Quick salt
2 1/2 tsp. regular salt
1 - 2 tsp. liquid salt
2 1/2 tsp. garlic salt
2 1/2 tsp. peppercorns or 1 1/2 tsp. coarse black pepper
2 1/2 tsp. mustard seed
1/2 - 1 tsp. ground red pepper or 1 tsp. crushed red pepper

Mix well. Cover and refrigerate 24 hours. Mix again and refrigerate another 24 hours. Make into 5 rolls and bake 8 hours at 150 degrees. Turn after 4 hours. Bake on cookie sheet or broiler pan with rack (this works best). Be sure to use hamburger and not ground chuck.
