SICILIAN ARTICHOKES | |
4 med. artichokes 1 c. bread crumbs 1/4 c. grated Parmesan cheese 1 c. minced garlic 1/4 c. minced parsley 1/2 tsp. salt 1/4 tsp. pepper 6 tbsp. olive oil 4 tbsp. milk 2 c. water Prepare artichokes. In a bowl, combine crumbs, cheese, garlic, parsley, salt, pepper and milk. Mix thoroughly. Divide crumb mixture into 4 parts. Fill center of each artichoke with crumb mixture. Place upright in a deep saucepan; artichokes should fit snugly to prevent spreading. Pour about 2 cups water around artichokes and sprinkle with remaining 2 tablespoons of oil. Bring to a boil. Reduce heat to low, cover tightly and cook 35-45 minutes or until tender. Leaves come off easily when they are tender. Lift artichokes out of pan with slotted spoon. Serve. |
