APPLES 'N SWEET POTATOES | |
5 sweet potatoes 1/2-1 cup brown sugar 4 large juicy apples, peeled, cored, and sliced 2 tsp. salt 1/4 cup butter 1 tsp. nutmeg 1/4 cup hot water 1/3 cup honey Boil sweet potatoes in water until almost tender. Peel and slice when cooled. Alternate layers of sliced potatoes and apples, beginning with sweet potatoes and ending with sliced apples. Cover each double layer with some of the sugar, salt, and bits of butter. On top layer of apples, sprinkle remaining brown sugar and dots of butter. Then sprinkle with nutmeg. Mix hot water with honey, then pour evenly over top. Bake in a 400°F oven until apples are tender, about 30-45 minutes. Great service with ham or turkey. Makes 8 servings. Variations: Top with 1/2 cup chopped nuts. Toss the apple slices in brown sugar and cinnamon-omitting nutmeg, honey, and water. Spread 1-2c. mini marshmallows over top and broil to brown.
