RHUBARB PUDDING 
2 tbsp. butter
4 c. rhubarb, chopped
1 1/4 c. sugar
2 tbsp. cornstarch
3 eggs
1/3 c. milk or half & half
Pinch of salt

In saucepan melt butter. Add rhubarb and 1 cup sugar. Cook slowly 10 minutes. Add the 1/4 cup sugar and cornstarch, eggs and milk beaten all together, cook and stir until thick.
