SWEET POTATO CASSEROLE 
2 (29 oz.) cans sweet potatoes, drained
1/2 c. butter
1 egg
Cinnamon to taste
1/2 c. evaporated milk
1 tsp. salt
1 c. sugar

Mash the sweet potatoes and mix the next 6 ingredients with them. Bake 20 minutes at 350 degrees. Add topping.

TOPPING:

1 c. crushed Special K or cornflakes
1 c. chopped pecans
3/4 c. brown sugar
1/2 c. butter

Combine the topping ingredients and put on top of casserole. Bake 25 more minutes at 350 degrees.
