BLACK-EYED PEAS DISH | |
1 can black-eye peas with liquid 1 can stewed tomatoes 1 med. onion 4 slices bacon, cut up 1/3 c. partially cooked rice Measure 1/3 cup raw rice and cook in water for 5 minutes, covered. Drain. Brown bacon and transfer to paper towel to remove excess fat. Drain fat from pan, leaving a small amount to saute onion. Add the other four ingredients and simmer about 30 minutes or until rice is done. Pan must be covered. NOTE: Leave bacon out for a vegetarian dish. |
