A 7 COURSE MEAL... ALL IN ONE
DISH!
 
3-4 medium potatoes, peeled and sliced (about 1/2-inch thick)
2-3 medium carrots, peeled and sliced (about 1/2-inch thick)
1 small onion, sliced thinly
1/2 cup instant rice (I use Minute Rice)
1 (15 oz.) can peas, juice and all
1 lb. ground beef (or chicken, turkey, etc)
1 or 2 (10 oz. ea.) cans tomato soup

In a casserole dish, layer the sliced potatoes on the bottom.

Add a layer of sliced carrots, followed by a layer of onions.

Sprinkle the rice over the onions.

Add the can of peas on top of the rice, ensuring that the juice coats the rice (this is what cooks the rice).

Spread the ground meat over the peas.

Using a knife or spoon, ensure there is some space between the casserole dish and the food.

Cover the meat with 1 can of tomato soup, making sure it seeps down into the other layers.

Cover and bake in a 375°F oven for about an hour (or until the potatoes and carrots are cooked through, check with a knife).

It's great served with warm bread!
