CHICKEN ZUCCHINI CASSEROLE 
6 c. zucchini, sliced
3 c. chicken, cooked and cubed
1 c. dairy sour cream
1 can cream of chicken soup
1/4 c. chopped onions
1/2 c. melted butter
1 pkg. chicken flavored stuffing mix
1 c. shredded carrots

Cook zucchini and onion together until tender and drain. Blend sour cream and chicken soup. Add zucchini, cooked chicken and carrots to cream mixture. Mix well. Add melted butter to stuffing mix. Put half in a 9x12 inch pan. Spread other ingredients on top. Bake for 30 minutes at 350 degrees in a conventional oven or for 7 minutes in a microwave oven at FULL power. Serves 8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
