TEMPTING PORK | |
1 lb. boneless pork, cut into pieces 1 tbsp. oil 1 med. onion, chopped 1 (16 oz.) can apricot halves 1/2 c. barbecue sauce 1/2 tsp. salt 1/8 tsp. black pepper 1 med. green pepper, slivered 1 tbsp. cornstarch 1/4 c. water In 10-inch skillet with cover, saute meat in oil for 10 minutes or until lightly browned. Add onions. Saute 2 to 3 minutes longer. Drain apricots. Add barbecue sauce and syrup from apricots to pork. Add salt and pepper, bring to a boil. Cover, simmer for 30 minutes or until meat is tender. Add green pepper. Cover and simmer for 10 minutes. Blend cornstarch and water. Add to pork. Cook, stirring until thickened, add apricots and heat gently. Serve on a bed of noodles. |
