PINEAPPLE-CHEESE CASSEROLE 
2 20 oz. cans pineapple chunks, drained
6 tbsp. reserved juice from pineapple
1 c. sugar
6 tbsp. four
2 c. shredded cheddar cheese
1/2 c. melted butter
1 c. Ritz crackers, crumbled (about 20 crackers)

Drain pineapple. Combine juice, sugar and flour in bowl, mixing well. Stir in cheese and pineapple. Spoon into greased 1 1/2 quart casserole dish. Combine butter and cracker crumbs in bowl, mixing well. Sprinkle over pineapple mixture.

Bake 350 for 20 - 30 minutes or until lightly browned.

Yields 8 to 10 servings.
