APPLE SPINACH SALAD 
4 c. spinach leaves
1 1/2 tbsp. vegetable oil
2 tbsp. cider vinegar
1/4 tsp. salt
Pinch of sugar
1 med. tart apple, diced
1/4 c. chopped red onions
1/4 c. dried currents or chopped raisins

Wash spinach thoroughly. Pat dry. Tear spinach into bite size pieces; set aside in salad bowl. In a small bowl, mix oil, vinegar, salt, and sugar. Add apple, onion, and currants to dressing and toss to coat. Cover and let stand at least 10 minutes. Add dressing to salad bowl and toss with spinach.
