ZUCCHINI SOUP 
2 lbs. zucchini, scrubbed and thinly sliced
2 tbsp. onions, chopped
4 tbsp. butter
1 tsp. curry powder
1/2 c. water
2 c. chicken broth
1/2 tsp. garlic, chopped

Melt butter, saute zucchini, onions. Add curry powder, garlic. Add water. Cook stirring often until zucchini is soft. Cool slightly. Pour into blender (or beat at high speed with electric mixer) until smooth. Mix zucchini mixture with chicken broth. Season to taste. Serve hot or cold.
