CORNMEAL GRIDDLE CAKES 
1 c. corn meal
1 tsp. salt
1 c. boiling water
2 tbsp. butter
1 c. buttermilk
1 egg, slightly beaten
1/4 c. flour
1/2 tsp. baking soda

Combine corn meal and salt. Stir in boiling water and melted butter, cover and let stand 10 minutes. Stir in eggs, buttermilk, flour and soda. Batter will be very thin. Bake on well greased griddle. Serve at once. Makes 4 dozen small cakes.
