ENGLISH TOFFEE COOKIES 
1 c. butter
1 c. sugar
1 egg, separated
2 c. flour
1 tsp. cinnamon
1 c. nuts, chopped

Cream butter and sugar until smooth. Add egg yolk and cinnamon. Mix thoroughly. Add flour; blend gently until all mixed. Spread on lightly greased cookie sheet, 10 x 15 inch. Beat egg white, spread nuts on top. Bake at 275 degrees for 1 hour. Cut while hot.
