ENGLISH TOFFEE COOKIES 
1 c. butter
1 c. sugar
1 egg, separated
2 c. flour
1 tsp. cinnamon
1 c. nuts (walnuts or pecans)

Cream butter and sugar until smooth. Add the egg yolk. Sift flour with cinnamon, add to creamed mixture using your hands to mix thoroughly. Spread in an even layer over the entire surface of a greased cookie sheet. Beat egg white slightly, spread on top to completely cover. Sprinkle chopped nuts all pressing them into dough. Bake in very slow oven, 275 degrees for 1 hour. CUT INTO SQUARES WHILE HOT.
