CHOP SUEY AMERICAN (48 SERVINGS) 
8 lbs. pork, lean cut in strips
32 onions, thinly sliced
1 1/2 gal. celery, finely cut
16 peppers, green, thinly sliced
3 qts. mushrooms, sliced
4 1/2 tbsp. salt
1 qt. rice, uncooked
1 1/2 gal. meat or vegetable stock

Brown pork and onions. Add remaining ingredients. Place in covered pan. Simmer in a moderate oven (350 degrees) 1 1/2 hours or until meat, vegetables and rice are tender.

NOTE: Part of stock may be made by boiling stems and skins of mushrooms in 1 gallon of water 10 to 15 minutes.
