BLACK BOTTOM CUPCAKES | |
1 pkg. cream cheese (8 oz.) 1 egg 1/3 c. sugar 1/8 tsp. salt 1 c. chocolate chips 1 tsp. vanilla 1 1/2 c. flour 1 c. sugar 1/4 c. cocoa 1 tsp. baking soda 1/4 to 1/2 tsp. salt 1 c. water 1/3 c. oil 1 tbsp. vinegar 1 tsp. vanilla Combine cream cheese, egg, 1/3 cup sugar, 1/8 teaspoon salt, chocolate chips and vanilla. Set aside. Combine and sift together the flour, 1 cup sugar, cocoa, baking soda and salt. Mix and stir into dry ingredients the 1 cup water, oil, vinegar and vanilla. Beat until well combined. Fill paper muffin cups 1/3 full. Top each with approximately 1 tablespoon of cream cheese mixture. Sprinkle with sugar and nuts, if desired. Bake at 350 degrees for 30 to 35 minutes, until cheese mixture just starts to brown. |
