4 med. baking potatoes, unpeeled 1/2 c. butter, melted 3/4 c. Parmesan cheese 3/4 c. dry bread crumbs 1/4 tsp. garlic powder 1/4 tsp. lemon pepper Salt (optional) Scrub the potatoes well, and cut them lengthwise into quarters, and then the quarters into thirds or quarters. Combine the crumbs, Parmesan cheese, garlic powder, and lemon pepper in a strong plastic bag. Dip potato slices first into the melted butter, and then drop them, a few slices at a time, into the bag of crumbs. Shake bag to coat potatoes. Place coated potato slices, in a single layer, in a greased 9x13x2 inch baking dish. Bake at 400 degrees for 30 to 45 minutes, or until potatoes are tender and golden brown. Sprinkle with salt, if desired. Serves 4 to 6. |
