CREPES 
1 1/2 c. flour
1 tbsp. sugar
1/2 tsp. baking powder
1/2 tsp. salt
2 c. milk
2 eggs
2 tsp. melted butter
1/2 tsp. vanilla

Mix flour, sugar, baking powder, and salt. Stir in remaining ingredients, then beat with hand beater or mixer until smooth. Lightly butter a 6 or 8 inch skillet; place over medium heat until the butter is bubbly. Pour a scant 1/4 cup of the batter in the skillet, then immediately rotate the skillet until a thin film of batter covers the bottom. Cook until light brown. Run a wide spatula around the edge to loosen; turn and cook other side until light brown. Stack crepes, placing wax paper between them. Keep covered until batter is used. If desired, spread applesauce, jam, or jelly on warm crepes. Roll up (be sure to fill crepes so more attractive side is on the outside). Sprinkle with powdered sugar.
