SOUTH LOUISIANA RED BEANS 
1 lb. red kidney beans
1 ham bone with generous amount of meat
1 bay leaf
Cumin powder to taste
Dash red pepper
1 lg. onion, chopped
1 lb. pepperoni, sliced
1 clove garlic, chopped

Wash and pick over beans, cover in cold water and soak overnight. Cook pepperoni, onions, garlic until slightly brown, add beans and water in which they have been soaked then ham bone and more water to cover, bay leaf, red pepper and cumin powder to taste. Cook slowly for several hours. Serves 8. Corn bread goes well with red beans.

I found that 1/2 tsp. cumin powder is a good average amount to use in this recipe; add more or less to taste.
