FRESH PEAR CAKE 
4 c. chopped fresh pears (or apples)
2 c. sugar
1 c. chopped pecans (optional)
3 c. flour
1/2 tsp. cinnamon
1/2 tsp. salt
2 eggs
2 tsp. baking soda
1 c. oil
1 tsp. vanilla

Combine pears and 2 cups sugar. Let set for a few hours or overnight. Stir occasionally to extract juice. Mix remaining ingredients easily with big spoon. Grease and flour bundt pan.

Bake at 325 to 350°F for about 70 to 90 minutes.
