QUINTIQUE'S STRICTLY VEGAN
OATMEAL COOKIES
 
3 tsp. baking powder
1 tsp. baking soda
1/4 tsp. sea salt
2 cups quick-cooking oats
2 1/2 cups whole wheat pastry flour
1 1/2 cups cane sugar (or to desired sweetness)
1/2 tbsp. nutmeg
1/2 cup vegan butter (Earth Balance or your favorite)
1 tsp. vanilla flavoring
1 tsp. almond extract
2 tbsp. water
1 tbsp. soy milk
1 tbsp. lemon juice
1 tbsp. extra virgin olive oil (or any available oil)
chopped pecans (optional or add any nut desirable)
raisins & Craisins (optional or add to desired preference)

Preheat oven to 350°F.

Mix all dry ingredients and stir thoroughly. Mix all wet ingredients in a separate container (this does not include the vegan butter). Add the vegan butter to dry mixed ingredients with hands until the texture comes to a crumbly texture.

Now, add mixed wet ingredients to dry mixed ingredients. Add the nuts, if using. Add raisins to one half of the batter in a separate bowl, then add the Craisins to the other half of the mix, or add to desired preference.

Drop the cookies on a lightly oiled cooking sheet.

Bake at 350°F for 10 minutes.

Note: The cookies will not look done after 10 minutes. But, take them out and let cool. The result will be to die for, chewy strictly vegan oatmeal cookies!
