“VINCENT'S FRIED SHRIMP” IS IN:

VINCENT'S FRIED SHRIMP 
2 lbs. jumbo shrimp
2 eggs, slightly beaten
1/3 cup grated Parmesan cheese
1 cup bread crumbs
salt and pepper
2 cups olive oil

Shell and devein shrimp. Roll them in beaten eggs, in bread crumbs, and in cheese. Season with salt and pepper. Fry shrimps in hot oil until brown on both sides, about 5 minutes. Drain on unglazed paper, and serve hot or cold.

Serves 3 to 4.
