SHRIMP FRIED RICE 
1 lb medium shrimp, peeled and deveined
1 large onion, diced
2 cups UNCLE BEN'S® rice (cooked)
3 large eggs, beaten

Boil rice until starch forms on top; remove from heat and drain with cold water. Steam rice according to package directions. Sauté onions with shrimp in butter until tender, then set aside.

Remove shrimp and onions. Fry the eggs and set aside. When rice is tender, place all ingredients together in pan. Mix rice, onions, shrimp and eggs together, then stir in soy sauce, to taste.
