APPLE MUFFINS 
1 3/4 c. all-purpose flour
1/4 c. sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
1/2 tsp. ground cinnamon
1 egg, well beaten
3/4 c. milk
1/3 c. cooking oil
1 c. apple, peeled and chopped
2 tbsp. sugar
1/2 tsp. ground cinnamon

Stir thoroughly the first five ingredients; make well in center. Blend egg, milk, oil and apple; add all at once to dry mixture. Stir just until moistened. Fill greased muffin pans 2/3 full. Sprinkle with mixture of the 2 tablespoons sugar and 1/2 teaspoon cinnamon. Bake at 400 degrees about 20 minutes. Makes 12 muffins.

For apple-raisin muffins, prepare batter as above, except add 1/4 cup raisins to batter.
