DIABETIC APPLE MUFFINS 
1 2/3 c. all-purpose flour
2 1/2 tsp. baking powder
1/2 tsp. salt
Sugar substitute to equal 1 tbsp. sugar
1 tsp. cinnamon
1/4 tsp. nutmeg
1 egg, slightly beaten
2/3 c. skimmed milk
1/4 c. reduced calorie butter, melted
1 c. apples, minced

Sift flour, baking powder, salt, sugar substitute and spices into medium mixing bowl. Combine egg, milk, and butter. Add egg mixture to dry ingredients. Blend only until flour is moistened. Fold in apples and pour batter into 12 non-stick muffin cups filling each 2/3 full. Bake in 400 degree oven for 25 to 30 minutes.

These were the best muffins I ever made! I have Type 2 diabeties so I substituted the sugar for Agave. I added a few raisons and topped the muffins off with rolled oats for fiber. the Agave makes these very moist and I lower the oven by 25%. Perfect!

Just because ppl have diabetes, they should still enjoy flavour! Followed this recipe exactly as it stands, and these muffins are sooo bland. Very disappointing.
