JEWEL CANDY
1 c. granulated sugar
1/2 c. light corn syrup
1/3 c. water
1/4 tsp. flavoring OIL (not extracts)
Food coloring

Butter an 8 x 8 x 2 inch pan, sides, too! Then butter sides of 1 quart saucepan. In it combine sugar, syrup, and water. Bring to boil, stirring constantly until sugar dissolves. Cook to hard crack stage (300 degrees). Remove from heat; add desired flavoring and coloring.

Pour in prepared pan. When just beginning to set around the edges lift edge of candy up (candy will still be hot and runny in middle). With scissors cut candy into 1 inch strips beginning with outside edges.

Then cut into small pieces. Work fast. Make only 1 batch at a time. Makes 1/2 pound. This is a Christmas favorite.
