JEWEL CANDIES
1 c. granulated sugar
1/2 c. light corn syrup
1/3 c. water
1/4 tsp. flavoring oil
Food coloring

Line 8x8x2 inch pans with foil, extending foil up sides; butter foil. Butter sides of 1-quart saucepan. In it combine sugar, syrup and water. Bring to boiling, stirring constantly until sugar is dissolved. Cook to hard crack stage (300 degrees). Remove from heat; add desired flavoring, coloring. Pour into prepared pan.

When just beginning to set around the edges, lift foil out of pan (candy will still be runny and hot in center). With scissors, cut candy into 1-inch strips, beginning with outside edges. Then cut into very small pieces of irregular shape.

To work fast enough requires 2 or 3 people to cut. Make only one batch at a time. Makes 1/2 pound.
