2 tbsp. vegetable oil
6 med.-size sweet potatoes

Preheat oven to 375 degrees. Scrub potatoes and dry well. Then coat all potatoes with vegetable oil and bake for 45 minutes. Remove from oven and prick each potato with fork to release steam. Cut cross in the top of each potato, then press both ends until potato bursts through. Top with butter. Serves 6.
