6 med. sweet potatoes
2 tbsp. butter
1 c. shredded pineapple
1/4 c. chopped English walnuts
1 tsp. salt
12 marshmallows
Juice of 1 orange

Wash potatoes. Bake in oven 350 degrees until done but still firm. Cut lengthwise and scoop out shells.

Mash scooped out potatoes, adding butter, salt and orange juice. Stir in pineapple and walnuts.

Refill potato half-shells with mixture.

Cut each marshmallow in half and place two halves on top of each potato half- shell. Place in hot oven until heated through and slightly browned on top. Very good with ham or turkey. From Workbasket.
