PEACH & CHICKEN CUPS 
2 med. chicken breasts, cooked
1 (3 oz.) pkg. neufchatel cheese
1/4 c. low cal mayonnaise
1/4 tsp. dried thyme leaves, crushed
1/8 tsp. dried basil leaves, crushed
1 (16 oz.) can lite peach halves
1/2 c. chopped celery
1 green pepper, sliced in 4 thick rings
Lettuce leaves

Cube chicken. Mix cheese, next 3 ingredients, dash salt and pepper. Add chicken, peaches and celery; toss. Be sure peaches are diced. Chill. Spoon mixture into pepper rings; serve on lettuce.
