SUPER SPINACH 
20 oz. chopped spinach, thawed and drained
3 tbsp. butter, melted
1 chopped onion
1/4 lb. sliced mushrooms
4 eggs
1/4 c. fine bread crumbs
1 can mushroom soup
2 tbsp. cheese cubes
1/4 tsp. salt
1/8 tsp. each pepper, basil and oregano

Saute onion and mushrooms in butter; set aside. Beat eggs; add bread crumbs, mushroom soup, cheese cubes, salt, pepper, basil and oregano. Add spinach and mushroom-onion mix to egg mixture.

Place in a greased 9 inch square pan. Sprinkle with 2 tbsp. shredded cheese. Bake uncovered in 325 degree oven for 35 minutes. Cut into 9 squares. May be served hot or cold. If served cold, garnish with slices of hard boiled eggs.

P.S. I have always served this hot.
