CRABMEAT AU GRATIN 
1 lg. onion, chopped
1/2 bell pepper, chopped
1/2 stick butter
2 egg yolks
1 lg. can Pet milk
16 oz. cheese, grated
3 ribs celery, chopped
Green onions, chopped
5 tbsp. flour
2 lbs. crabmeat
1/2 c. milk
Bread Crumbs

Saute onions, celery, and bell pepper in butter until soft. Add flour and blend; add milk and blend. Remove from heat; add egg yolks, crabmeat and season to taste. Put 1/2 grated cheese in mixture.

Place in casserole dish and top with remaining cheese and bread crumbs. Bake at 350 degrees for 30 minutes.

NOTE: Shrimp may be substituted for crabmeat or half shrimp, half crabmeat.
