CREAMY MOIST COCONUT CAKE 
1 c. buttermilk
1 tsp. baking soda
5 eggs, separated
2 c. sugar
1 stick butter
1/2 c. Crisco
2 c. sifted flour
1 tsp. vanilla
1 c. Angel Flake coconut

Combine buttermilk with soda, let stand a few minutes. Beat egg whites stiff. Cream Crisco, butter and sugar. Add egg yolks one at a time. Add milk gradually with flour. Add vanilla. Fold in stiffly beaten egg whites and coconut. Cook 25-30 minutes at 350 degrees. Makes 3 (9 inch) layers.

ICING:

1 can Angel Flake coconut
1 (8 oz.) pkg. cream cheese
1 stick butter
1 tsp. vanilla
1 box sifted powdered sugar

Mix cheese and butter, then add sugar and vanilla and cream this. Spread on cake and between layers and on the sides. Sprinkle with coconut on top and between layers.
