GOLDEN FISH CAKES WITH HERB
MAYONNAISE
 
1 1/2 lbs. cod fillet
1 1/2 tsp. lemon juice
2 tsp. chopped parsley
Salt and pepper
1/2 c. mayonnaise
2 eggs, beaten to mix
3 scallions, sliced
1 c. fresh bread crumbs
1/4 tsp. crushed fennel seeds
1/4 tsp. dried thyme
1/8 tsp. hot pepper sauce
1/2 c. flour
3 tbsp. oil

Put fish in a frying pan with 1/2 inch water, cover and simmer until just done, about 10 minutes. Drain, flake fish into a bowl and let cool. Stir lemon juice, parsley and 1/8 teaspoon pepper into mayonnaise. Stir eggs, scallions, bread crumbs, fennel, thyme, hot pepper sauce, 1/2 teaspoon salt and 1/8 teaspoon pepper into flaked fish. Shape into 8 patties. Dredge in flour. Saute in oil over medium-high heat until golden brown, about 7 minutes a side. Serve with herb mayonnaise.
