1 (10 oz.) pkg. frozen chopped spinach, thawed and drained 1 tbsp. olive oil 1 tbsp. butter 1 lb. lean ground beef 1 sm. onion, chopped 1/2 tsp. basil 1/4 tsp. marjoram 1/4 tsp. oregano 1/4 tsp. black pepper 5 eggs Drain spinach thoroughly. Heat oil and butter in large, heavy skillet. Add ground beef and cook until crumbly. Add onion and cook until tender but not browned. Stir in basil, marjoram, oregano, salt and pepper. Stir in drained spinach and cook until liquid in spinach has evaporated. Beat eggs, add to meat mixture and cook, stirring until eggs are set. |
