LATKES 
2 c. grated raw potatoes
1 egg
1-2 tbsp. flour
Salt & pepper

Grate potatoes and let set. Squeeze out as much water as possible. Add flour and egg, salt and pepper. Mix with fork. Heat an inch of oil in a frying pan. When oil is hot, put a spoonful (large) of potato mixture into it. Press down with flipper. When potato edges are brown, turn and finish browning. Keep warm until ready to serve. Serve with sour cream, applesauce, or ketchup. Kids love them.
