CHICKEN AND RICE 
1 (3 to 5 lb.) whole chicken, cut up (or any chicken pieces you like)
1 cup uncooked rice
1 onion, chopped
1 green and/or red pepper, chopped
1 (8 oz.) pkg. sliced mushrooms
1 (15 oz.) can chicken broth (Swanson)
garlic powder, for sprinkling
salt and pepper, to taste
or other spices you like to use

Preheat oven to 400°F.

Spray a 9x13-inch pan with non-stick cooking spray (Pam). Put the rice, chopped onion, chopped green or red pepper, sliced mushrooms into pan. Pour the chicken broth over rice and vegetables. Sprinkle the spices on and give the whole thing a stir. Place the chicken, skin side up, on top of rice and vegetables.

Bake in preheated 400°F oven for 40 to 45 minutes or until rice is done and chicken is golden brown.
