POTATO LATKES 
1 lg. potato
1/2 onion
2 tbsp. flour
2 tbsp. fresh parsley, chopped
2 egg whites, beaten stiff
Salt and pepper to taste
5 tbsp. instant dry milk
Oil for frying

Grate potato and drain liquid. Grate onion. Combine potato, onion, flour, parsley, egg whites, salt, pepper, and milk. Drop spoonsful of batter into hot oil in a skillet, flatten with the back of a spoon, and brown well on both sides. Serve with applesauce or sour cream to top with.
