POTATO LATKES 
6 med. potatoes
2 eggs
Pinch of baking powder
1/2 c. flour
1 tsp. salt
1/2 to 1 tsp. black pepper
Vegetable shortening for frying

Pare and grate potatoes into mixing bowl. Squeeze out excess fluid. Add remaining ingredients (except the vegetable shortening). Melt shortening in heavy pan or griddle. Drop batter by spoonful and fry until brown and crisp on both sides. Drain on paper toweling. Serve with applesauce or sour cream. Can be kept warm in oven on low heat. Serves 4-6.
