POTATO LATKES 
1 1/2 lbs. potatoes
1 sm. onion
1 egg
2 tbsp. flour
1/3 tsp. salt & pepper
Oil to fry

Peel and grate potatoes, grate onion; drain. Add egg, flour and salt; mix very well. Heat oil over medium heat, drop 1/4 cup into skillet. Fry until brown on both sides, adding oil as needed.
