POTATO LATKES 
8 potatoes, baking potatoes are best
1 egg
1 lg. onion
Flour or matzah meal
Salt & pepper
Cooking oil

Wash potatoes thoroughly and remove edges. Grate on coarse side of grater. Squeeze through dish towel to remove excess water. (Or use more matzah meal). Grate in the onion. Add flour, the egg, salt to taste. Fry until golden brown. Drain on brown paper. The first ones fried can be kept warm in a luke warm oven until the last ones get fried.
