LATKES 
6 med. size potatoes
1 or 2 lg. onions
2 eggs
1/2 c. flour
1/4 tsp. baking powder
1 tsp. salt
Vegetable oil for frying

Peel potatoes and grate into a large bowl. Cover with cold water and refrigerate. This is best done 2 or 3 hours ahead so the water has time to soak some of the starch out of the potatoes. Change water every hour or so.

Drain the potatoes and squeeze out as much water as possible. Peel and grate onion and add to potatoes. Stir in eggs, flour, baking powder and salt. Heat enough oil in a heavy pan to cover bottom about 1/4 inch deep. Drop potato mixture in hot oil by a tablespoon and form 3 inch patties. Fry over moderate heat, turning to brown both sides. Serve with applesauce.
