SPINACH FANDANGO 
1 lb. ground chuck
1 lg. onion, chopped
6 oz. can mushrooms
12 oz. skim milk Mozzarella
8 oz. sour cream or plain yogurt
1 can cream of celery soup
1 pkg. frozen chopped spinach
1/2 c. Minute rice
1 tsp. salt
1/2 tbsp. oregano, or more
Pepper and garlic to taste

Brown chuck and onion. Drain off excess fat. Add mushrooms with liquid and all seasonings. Cook and drain spinach. Mix spinach, soup, sour cream, rice in bowl. Layer meat, rice and cheese in casserole; repeat. Bake in 350 degree oven uncovered for 20-30 minutes or until cheese is lightly browned and mixture bubbly. Can be made a day ahead and baked later.
