SPINACH FANDANGO 
2 lbs. ground beef or
1 lb. ground beef and
1 lb. ground turkey
2 tbsp. chopped onion
1 (4 oz.) can mushrooms
1 lg. clove garlic, minced
1 tsp. oregano
Salt and pepper to taste
2 pkgs. frozen chopped spinach
1 can cream of celery soup
1 (8 oz.) carton sour cream or plain yogurt
8 oz. grated Mozzarella or Monterey Jack cheese

Brown meat; drain. Add onion, mushrooms with liquid, garlic and seasonings. Place frozen spinach on top of meat mixture. Cover and steam until spinach is thawed. Drain well.

Stir in sour cream (or yogurt), cream of celery soup and 4 oz. cheese. Mix well. Turn into lightly sprayed 2 quart casserole. Top with remaining cheese. Bake uncovered 20 minutes at 350 degrees.

Freezes well before baking. Can use several small casseroles. Serve with tossed salad and crusty garlic bread or sour dough rolls.
