RANCH STYLE HAM AND POTATOES 
1 slice fully cooked smoked ham (about 1 1/4 lbs.)
2-3 tbsp. prepared mustard
4 med. onions, thinly sliced
1 tbsp. butter
Dash of salt
Dash of pepper
1/2 c. chicken broth
1/2 c. half & half
4 tbsp. grated sharp cheese
3-4 tbsp. chopped parsley

Grease a 1 1/2 quart baking dish. Saute onion in butter until soft but not browned. Place half of the potatoes in a thin layer in the bottom of the baking dish. Cover with half the onion. Place ham on top. Spread with mustard. Cover with remaining onion. Sprinkle with salt and pepper. Cover with potatoes. Add broth. Bake at 350 degrees for about 40 minutes. Add half & half. Sprinkle cheese on top. Continue baking at 375 degrees until potatoes are tender and cheese is melted, about 15 minutes. Sprinkle with parsley. Serve immediately.
